   Season the beef with Bayou Heat and brown hard in batches.

   Build a medium roux in the pot, then add the onions and cook until soft.

   Add the stock and beef, cover, and simmer 90 minutes.

   Add carrots and potatoes and cook 30 minutes more until tender.
